Fresh Vegetables for Everyday Meals

Fresh vegetables do not need complicated recipes to earn a regular place at the table. A practical starting point is to choose two or three colours and prepare them in different ways through the week. Crisp cucumber, capsicum and carrot work well in lunchboxes and salads. Broccoli, zucchini, corn and cauliflower can be steamed, roasted or added to a stir-fry. Tomatoes, leafy greens and herbs can brighten sandwiches, pasta and eggs.

The health value comes from variety. Vegetables provide dietary fibre as well as different combinations of vitamins, minerals and protective plant compounds. Fibre supports normal digestive function, while vegetables rich in vitamin C contribute to normal immune function and help the body absorb iron from plant foods. The Australian Government recommends eating a wide variety of nutritious foods and, for adults, generally aiming for at least five serves of vegetables and legumes each day.

Make vegetables easier to use by washing and drying them after shopping, then storing them where they are visible. Cut only what you expect to use soon so the produce stays fresh. When cooking, try roasting a mixed tray with olive oil and herbs, adding chopped vegetables to a familiar pasta sauce, or serving raw vegetables with hummus. Small, repeatable choices are more useful than chasing a perfect meal.
